Whole Grain Pancakes
I love this whole grain pancakes recipe. I tried many recipes from cookbooks and didn’t find one I loved so I created this one myself. It took a couple of tries but I compiled a recipe that I adore. These are a hit at brunches and with overnight company.
Ingredients
- 1/2 cup all-purpose flour
- 1/3 cup dry milk powder
- 1/2 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup whole wheat flour
- 1/4 cup white sugar
- 2 eggs, lightly beaten
- 1-1/2 cups water
- 2 tablespoons butter (unsalted), melted
- 1 tablespoon and 1-1/2 teaspoons vinegar
- 2 tablespoons of brown sugar
- 1 teaspoon of nutmeg
Directions
- In a large bowl, sift all-purpose flour, milk powder, baking powder, baking soda, nutmeg, brown sugar and salt. Stir in whole wheat flour. In a small bowl, combine sugar, eggs, water, butter and vinegar. Make a well in the flour mixture, and pour in the egg mixture. Mix until smooth.

Heat a lightly oiled griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using about 1/4 cup for each pancake Cook until pancakes are golden brown on both sides. These are best if served very hot.
